Macadamia Crusted Barramundi


Again a return from a mini hiatus. Very bad blogger. But have loads to share with you in the next few weeks.

My mother recently came over for the very first time for dinner. Being the great cook that she is, the pressure was on. My mother is definitely hard to please. She watches Masterchef and rolls her eyes when she hears the challenges. I stupidly try to convince her otherwise but she is way too stubborn.

One of the dishes I made that evening was this lovely barramundi. It is such an easy recipe with great fresh flavours. The verdict..... she loved it. Oh thank god!

Serves 4
.
Ingredients
.
800g of barramundi fish
200g roasted unsalted macadamia nuts
Zest from 1 lemon
Juice from 1 lemon
2 clove garlic, crushed
2 tablespoons dill, chopped
2 tablespoons chives, chopped
2 tablespoons olive oil
salt and pepper to taste

Method
.
1. Preheat oven to 180 degrees. Place the nuts, lemon zest and juice, garlic, and herbs in a food processor until blended. Add the olive oil and process again. Season with salt and pepper.

2. Line a baking tray with foil, lightly oil the foil.  Place the barramundi on the foil.  Top with the macadamia mixture.  Press the mixture onto the fix to ensure it is firmly on the fish.

3. Bake in the oven for about 15 minutes, or until the fish is cooked through and the crust golden.
